紀元２世紀、アピキウスという美食家の遺したレシピ集があります。世界で最古とされるこのレシピ集には、出産していない雌豚の外陰や孔雀のロースト、ミルクで肥育した蝸牛のグリルなど、食っては吐き、また食ったという退廃的なローマの美食を象徴するトンデモ料理のほか一般的な当時の食文化が伺えるシンプルなメニューも記されています。
南イタリアの豊富な野菜、地中海からは魚介類、高級品であった肉類はもっぱら塩豚か家禽類がよく食され、調味料には蜂蜜、スパイス、ハーブ類をふんだんに使い、さらに魚醤のような調味料も登場、東西を制したローマの当時の栄華を偲ばせます。今のイタリアンやフレンチの原点とも通じるこのアピキウスのレシピを参考に、現代のシェフが独自の解釈を加えた料理を披露します。さらに特別ゲストとして、昨年NHKスペシャル「ローマ帝国」シリーズ制作ディレクターとして、ポンペイに滞在・現地ロケを行った倉森京子女史をお招きし、古代ローマ秘話もお聞かせいただく、という贅沢さ。東新宿の一室から、遠くポンペイに夢を馳せてみませんかー？
